Ⓚ Chinese Fried Rice with Ham

Fry 1 cup finely diced cooked ham, chicken or pork lightly in 2 tablespoons hot oil. (We like this best with leftover Ham.)
Add 3 finely sliced fresh mushrooms (we Omit) , 1 quart or more cold cooked rice, 1 finely chopped green onion, and 4 tablespoons soy sauce.
Fry over low heat 10 minutes. Add 2 well beaten eggs; cook and stir 5 minutes more. If color isn’t dark enough, add a little more soy sauce. Makes 6-8 servings.
We use 2 cups of rice and 4 cups of water and 1/2 t salt. Bring to a boil.
Stir in rice.
Cover, lower heat and cook 20 minutes. Yield 6 cups.

We like this with frozen peas or snow peas. We freeze extra rice in zip lock bags so we can quickly make this.
